One of the meals my kids beg me to make them on the regular is my simple Protein banana pancakes, topped with peanut butter and Canadian maple syrup.

Ingredients:

  • 1 banana
  • 1 egg
  • 1/8c quick oats
  • 1/8c water or milk or almond milk
  • 1 scoop vanilla protein powder

For my growing boys I typically double this receipe.

Put all ingredients in a food processor or blender and blend until mixed and smooth. (You may need to stop a few times to scrape the sides of the blender because of the protein powder.)

Heat a lightly oiled griddle or frying pan (I typically use coconut oil) over low-medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. Top as you please.

    Do you think we could use the large rolled oats? I’ve already bought some for other recipes. I’m thinking I should blend the oats first by themselves to break them down a bit before adding the other ingredients?
